Rice noodles, cooked according to package directions
Instructions
Heat rice paper wraps under very hot tap water until pliable
and sticky. Alternately you can heat them in boiling water in a
shallow frying pan.
Lay the wrap on a plate. Put some lettuce, cucumber, and red
pepper strips in a little line in the middle of the wrap. Add
peanut sauce now if you’d like it inside your wrap (see recipe
under sauces). Add rice noodles.
Close your wrap by folding ends in and then wrapping up
snugly.
Serving
Suggestions
Serve with peanut sauce (inside or for dipping) or sweet Chili sauce. These can be cut in half to serve as appetizers or make them for a light lunch.
