     Asparagus and Bean Salad

1lb French green beans, cut into 2in pieces
1-2lb fresh asparagus, cut into 2in pieces
1Tb shallot, finely diced
1Tb fresh chives, finely chopped
5 slices bacon, cooked and chopped
3 hard boiled eggs, pealed and cut in quarters
2ts Dijon mustard
4ts balsamic vinegar
Salt and pepper to taste

Bring a large pot of water to boil. Add green beans and asparagus. Lower heat and simmer for 2-4 minutes until vegetables are tender but crisp. Drain and rinse under cold water. Set aside.
In a large bowl, whisk together vinaigrette. Then add vegetables and toss. Sprinkle shallots, chives, and bacon. Top with eggs.
