     Mexican Lasagna

Ingredients
1/2 onion- finely chopped
2 tsp paprika
2 tsp salt
1 tsp cumin
2 tsp pepper
2 tbsp chili powder
2 tbsp chopped cilantro
10 oz can enchilada sauce
14.5 oz can diced tomatoes
 
15 oz can black beans; rinsed & drained
4 oz can diced green chiles
1/2 cup frozen corn
12 oz mexican cheese blend
6 oz can sliced black olives
1 lb lean ground beef or ground turkey
2 scallions- finely chopped
large flour tortillas

Instructions
Heat oven to 425. Large skillet on medium heat, drizzle olive oil. Add beef, onion, paprika, cumin, chili powder, salt & pepper. Brown for 5-7 mins. Add tomatoes, beans, & corn.
Smooth 1/3 of the enchilada sauce of bottom of 8x11 pan. Lay tortillas on bottom of pan, slightly overlapping (about 4 tortillas).
Spoon 1/2 beef mixture over tortillas. Layer tortillas, 1/3 enchilada sauce over tortillas. Sprinkle 1/2 cheese on top. Scatter green chiles. Add remaining beef.
Layer tortillas, then remaining enchilada sauce. Sprinkle remaining cheese. Garnish with scallions and olives. Bake 10-15 minutes. When done sprinkle with cilantro.
