     Orange Cranberry Biscotti

Ingredients
1 cup dried cranberries
3 T orange juice
3/4 cup sugar
Zest of one orange
1/2 cup melted butter
2 eggs
2 1/2 cups flour
2 tsp. Baking powder
1/4 tsp salt
 
4 oz. white chocolate

Instructions
Place dried cranberries in a bowl add boiling water for 2 minutes then drain well. In a large bowl combine the orange juice, sugar, zest, and butter, mix well, then add one egg at a time, mixing well after each. In a separate bowl combine the flour, baking powder and salt. Add flour mixture to wet ingredients and mix until well incorporated. .

Add cranberries and mix well, then cover and chill dough for 30 minutes.
Preheat oven to 350° and line a cookie sheet with parchment Spray hands with PAM then divide dough in half and shape into 4x8 rectangles. Bake for 25 minutes (or until light golden brown edges start to brown) Place parchment paper on cooling rack for 15 minutes. Slice each log into to 3/4” slices then place cut side down on cookie sheet without paper and bake again for about 24 minutes, turning half way through. Remove and cool. Melt white chocolate and drizzle over one side of biscotti.
