Mix meat with salt, black & red pepper, garlic and lime juice. Let ripen in frig 30 minutes or longer.
In Mexico this is taco asada - NO red taco seasoning. They use thinly sliced beef, chicken or pork. But, that is time consuming and this works just as well.
While beef is in frig, make your own recipe of fresh salsa.
Cook & crumble meat slowly in large skillet. When done, scoot meat to side of skillet and saute diced onions. If you have used good lean meat, draining is not necessary - just serve with slotted spoon.
Heat tortillas. A tortilla cozy is superb for this - takes just a few seconds in the microwave. If you don't have a cozy, wrap a few torillas in paper towels and warm.
Spread hot tortilla with sour cream, add meat and onions down the middle of tortilla. Top with fresh salsa. Fold and enjoy
