     Caprese Chicken

Ingredients
1 lbsmall roma tomatoes sliced in 4 thick slices each 6 to 8
2 T EVO divided
sea salt and freshly ground black pepper
4 lg boneless skinless chicken breasts 1 1/2 to 2 lb pounded to an even thickness
4 to 6 oz fresh Mozzarella cheese sliced 1/4 in thick (I used shreeded Italian cheese)
2 T balsamic reduction
1/4 c fresh basil
 

Instructions
Line a rimmed baking sheet with parchment paper. Arrange tomato slices in a single layer. Drizzle with 1 T EVO and pinch S&P. You can mix up by hand to evenly coat but put them back in a tidy single layer. Roast at 400 for 30-40 min or until they appear lightly caramelized. You can crank on broiler for a couple min to get a little more colour.
While tomatoes are cooking prepare chicken. Heat 1 T EVO in a non stick frying pan over med high heat. Sprinkle chicken lightly with S&P. Add chicken to pan and cook till lightly browned on one side. Flip chicken over. Cover and reduce heat to low. Continue cooking 15 min. Remove from heat but leave covered for 5 min.
Carefully spoon off any accumulated liquid from around chicken. Return pan to low heat burner. top each pc with mozzarella and then a slice or two of tomato. Cover with lid and let stand for 2 or 3 min until chees is melted. Drizzle with balsamic reduction. Sprinkle with basil. Top with black pepper.
