     Mediterranean Fish Dish

Ingredients
4 fish fillets such as cod or haddock 5 oz each
S&P
4 tsp EVO divided
2 tsp fresh lemon juice
1/2 c minced red onion
2 tsp minced garlic
2 c quartered grape tomatoes or diced roma tomatoes
2 tsp balsamic vinegar
1/4 c feta crumbled
 
12 basil leaves thinly sliced or chopped

Instructions
Pat fish dry w paper towels and sprinkle w S&P on both sides. Heat 2 tsp EVO in a 10 inch non stick pan over med-high heat. Add fish and cook 2-3 min or until edges start to brown. Carefully flip fis and cook about 2 min more or until fis is cooked through and flakes easily. Transfer fish to serving plate and drizzle with lemon juice. Keep warm.
Wipe skillet clean and heat remaining oil. Add onion and garlic. Cook and stir until onions begin to soften and garlic is golden about 2 min. Stir in tomatoes vinegar and a few grinds of S&P. Mix well and cook 1 min. Remove from heat and add in feta and basil. Spoon over fish.
I like the tomatoes cooked a little longer than stated in original recipe. I also have added blanched green beans to this mixture. Excellent.
