2 TBSP butter

1/2 cup onions - finely chopped

1 clove garlic - crushed OR 1/8 tsp minced garlic

2 cups ricotta cheese

1pkg (10oz) frozen chopped spinach
|

2 eggs
|
|
1 tsp basil leaves crushed
|
|
1-1/2 cups (6oz) cheddar cheese-shredded
|

Red sauce
|
|
Parmesan cheese
|

350 oven 40-45 mins
|
|

Instructions |

|
Thaw spinach in colander and drain.
Cook shells (12-15mns) Drain, cover with cold water until ready to stuff.
Melt butter, sauté onion, garlic.

Beat ricotta cheese on high speed about 5mns. Add onion, garlic, spinach, eggs, basil and cheddar. Combine thoroughly.

|
|
Drain shells, stuff with filling. Place sauce on bottom of 13x9 pan. Sprinkle with parmesan.
