     Fresh Cucumber Salad

Ingredients
Red Wine Vinaigrette-
1/4 cup olive oil
2T red wine vinegar
1T lemon juice
1t dried oregano
1/2t salt
pepper
Salad-
 
2 cucumbers
4 roma tomatoes
1/2 small red onion
green pepper
feta cheese
Instructions
Mix together all vinaigrette ingredients.
Dice cucumbers, pepper, tomatoes. Thinly slice onion and soak in a bowl of water for 5-10 minutes.
Mix vinaigrette and salad stuff together. Add feta. Yummy!
