     Baked Rice, Tomatoes & Peppers

Ingredients
1 heaping cup of Uncle Ben's Converted Orig long grain rice
Saute 1 very large onion in 1/2 c mazola oil (Spanish or sweet)
1 rounded Tbsp Paprika
1/2 fat can of whole tomatoes squeeze with hands
2 heaping cups of chop up frozen or fresh peppers sweet & hot
1 1/2 tsp salt to taste
3 cups of water
 

Instructions
Place dried rice in 9x13 pyrex dish. Saute onion, add Paprika, whole tomatoes. Cook down before adding water stirring all the time so not to burn.
Add frozen peppers to sauce and cook awhile stirring. Add salt & water and let boil. Add some black pepper. Pour mixture over dried rice.
Bake 400 degrees for approximately 30 minutes or until rice is cooked.
NOTE- DO NOT USE VIDALIA ONION OPTIONAL- For Tomatoes, we can use 3-4 frozen ones chopped up in place of canned.
Serving Suggestions
So yummy, use as a side dish or eat by it self
