Make Brownie mix according to cake-like brownie
directions using the 1/4 water, 2/3 C oil and 3
eggs in a 9x13 dish. Bake, cool completely and
freeze if time allows.
For mint layer combine powdered sugar, butter,
water, and extract and beat until smooth. Use
food coloring if desired. Spread over frozen
brownies. (if brownie crumbs into mint layer it's
ok because it will be covered with chocolate)
In a glass bowl melt 6 T butter and 1 Cup
chocolate chips in the microwave for 1 minute on
high. Then stir until smooth. Spread over mint
layer. Chill and let completely cool before
cutting.
A double recipe fits just right in a 12X17 sheet
pan.
