     Wheat Berry and Wild Rice Salad

Ingredients
1 c wheat berries
3/4 c wild rice
1 c pot barley
4 green onions chopped
1 sweet red pepper diced
1/3 c raisins
1/2 c roasted hazel nuts (I used pine nuts and almonds)
1/2 toasted sunflower seeds
 
DRESSING;
1/4 c canola oil
1/4 c soy sauce (I used tamari)
1/4 c lemon juice
1 T dijon mustard (grainy works too)
2 cloves minced garlic (more?) (you bet)
1/2 tsp salt
1/4 tsp pepper

Instructions
In a good size pot cover wheat berries with 2 inches of water. Bing to a boil. Simmer for 1 1/4 hours. Barley covered in two inches of water cook for 20 to 40 min depending on the age can be tough. Wild rice covered with 2 inches of water simmered 30-45 min. Drain in colander and I like to give a quick rinse with cold water.
Mix up dressing and stir into grains. Add diced onions and red pepper.
I leave the raisins and hazel nuts and sunflower seeds on the side to be added at table. If taking to a pot luck would add everything but because this makes so much prefer adding at end.
