Ingredients
2 to 2 1/2 cup brown long grain rice cooked
1 lb lamb stew meat seasoned
or
1 lb boneless skinless chicken breasts seasoned and cut in to pieces
4 tbsp olive oil
4 tbsp butter
1 med. onion diced
3 large carrots juliened
3 cups chicken stock [ for lamb or chicken]
 
1 tsp black pepper
1 1/2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp hot hungarian paprika
1 1/2 tsp ground coriander
3 to 5 cloves of garlic minced
freshly chopped parsley

Instructions
cook the rice as per directions or prepare in a rice cooker and set aside.
in a large dutch oven brown the meat in olive oil and remove and set aside. brown the vegetables in the butter and add the meat back in to the pot. add the chicken stock and all the seasonings with the garlic and simmer for 45 minutes.
add the cooked rice and stir to combine, simmer till the chicken stock is mostly absorbed. garnish with the parsley and serve
