For a quicker prep, I use cole slaw mix.
In a large skillet, saute onion, carrot, spinach,
bell pepper and cabbage in oil over medium heat
until tender.
Pour beaten eggs over veggies in skillet.
Add salt and pepper.
Stir well
Cook eggs over medium heat until firm.
Enjoy!
