     Bolu Pandan

Ingredients
120 g butter
40 g sugar
Pinch of salt
1 tsp Pandan paste
120 g self raising flour
2 eggs
150 g sweet condensed milk
 

Instructions
Beat butter and sugar until white & fluffy at least 15 mins. Add salt n pandan paste and mix. Next add sweet condensed milk and mix until smooth. Followed by flour then two eggs with ome minute interval.
Pour into loaf pan and bake at 180 with bain marie technique (bigger tray with water half full is placed in the oven at the bottom rack while loaf pan is placed in middle rack) for 25 mins. Then take out the water tray and continue baking at 160 for 20 mins further.
Note- mixture is very thick - but bake nicely though not very tall in a bundt pan. Try adding one more egg and beat for another minute to see whether it will get lighter and higher. Also may want to cut the butter to 100 g and add milk.
