     Scalloped Sweet Potatoes in lemon gingercreamsauce

Ingredients
3 cups heavy cream
3/4 cup sugar
1/3 cup fresh lemon juice
2 t. fresh ginger
2 t. kosher salt
8 cups sweet potatoes peeled thinly sliced
 

Instructions
Preheat oven 350'
Boil cream sugar lemon juice ginger and salt in a large pot over high heat until reduced to two(2) cups about 20 minutes.
Stir in seet potatoes then transfer to a 2 qt. casserole dish
bake 45 minutes or until sweet potatoes are tender. let rest 10 -15 minutes before serving.
