     Fritters- Banana

Ingredients
2 ripe mashed bananas
1/4 c non-dairy milk
1 tsp vanilla
1 tbs ground flaxseeds
1 c oat flour
1/2 c grain flour
1/4 c coconut/date sugar
1/4 tsp salt
coconut oil
 

Instructions
Mash bananas in a medium bowl, Stir in milk, vanilla and flaxseeds. Set aside. In a large bowl, combine flours, sugar, and salt. Add banana mixture and stir to fully combine until batter is smooth. Heat oil on medium-heat in a large skillet, making sure to cover the base. Place batter by the spoonful onto skillet. Cook for about 4 minutes on each side or until golden.
To make your own oat flour and/or brown rice flour. Measure the desired amount of flour needed, add about 1/2 cup extra to compensate for the size reduction after processing. Place grain in a food processor or blender. Process until smooth, pausing to scrape down sides with a spatula. Store in airtight container in refrigerator or freezer. 2. Make sure the middle of fritters is fully cooked, I love to press fritters with the spatula when they are almost cooked. 3. Banana fritters are delicious served on its own, with maple syrup, nut butter.
