     Hoisin Chicken with Vegetables

3 Chicken Breasts, cut into small 1 in. slices
2 T Sherry
2 T Cornstarch
1 Green Bell Pepper, sliced
1/2 C Mushrooms, sliced
1/2 C Celery, sliced
1 small can sliced Water Chestnuts
3 T Hoisin Sauce
1 T Sugar
1/2 C Cashew Halves
4 servings of cooked white rice.

Cook rice according to directions. Mix Sherry and Cornstarch, add sliced chicken, marinade. Mix Hoisin Sauce with Sugar... set aside.
Heat Wok...Stir fry vegetables about 2 minutes- Remove.
Add Chicken and stir-fry until opaque. Salt and pepper. Mix in Hoisin Sauce mixture, toss to coat.
Add cooked vegetables and 1/2 C nuts. Stir to coat and serve over rice.
Serving Suggestions
Serve with Crunchy Chow Mein Noodles.
