     Healthy Corn Chowder

Servings   4-1 cup

1 tsp vege oil
2 TBSP celery - finely diced
2 TBSP onions - finely diced
2 TBSP green pepper - finely diced
10oz pkg frozen whole kernel corn
1 cup - raw potatoes - peeled, diced 1/2 cubes
1 cup water
1/4 tsp paprika
2 TBSP flour
2 cups skim milk
2 TBSP parsley
black pepper

Saucepan heat oil. Add celery, onion, green pepper. Saute for 2 mns
Add corn, potatoes, water and spices. Bring to a boil, reduce heat to medium. Cook, covered about 10mns until potatoes are tender.
In a jar, place 1/2 cup milk and flour and shake. Add gradually to cooked veges, then add remaining milk.
Cook, stirring constantly over medium heat until mixture comes to a boil and thickens. Garnish with parsley.
