1 c. Panko crumbs
|

1/2 c. grated Parmesan cheese
|
|
1 tsp Italian seasoning
|
|
4 zucchini, quartered lengthwise
|

1/2 c. all purpose flour
|

salt and pepper, to taste

2 large eggs, beaten
|
|
2 Tbsp chopped fresh parsley leaves
|

Instructions |

|
Preheat oven to 425 degrees. Coat a cooling rack with nonstick
spray and place on a baking sheet.
|

In large bowl, combine Panko, parmesan, and italian seasoning.
Season with salt and pepper to taste.
|

|
Working in batches, dredge zucchini in flour, eggs, then dredge in
Panko, pressing to coat.
|
|
|
Place zucchini onto baking sheet. Bake for 20-25 minutes, or until
golden brown.
