3 1/2 lbs sweet potatoes, peeled and diced into 1/2 in cubes
2 c miniature marshmallows
Spray slow cooker with cooking spray.
In a microwavable bowl, mix brown sugar, butter, pumpkin pie
spice, 1 tsp salt, and 1 Tbsp water. Microwave uncovered on high 1
& 1/2 minutes, stirring once. Stir in vanilla. Add sweet potatoes, stir
to coat thoroughly.
Pour mixture in slow cooker. Cover and cook on high 3 1/2 - 4
hours. Reduce to warm heat setting. Stir mixture, top with
marshmallows, and cover 1-2 minutes until slightly melted.
