Place butter,onion and paprika in
casserole;microwave 2 minutes. Mix in flour until
well incorporated. Add boiling milk and
nutmeg;whisk well and correct seasoning. Microwave
6 minutes uncovered,stirring every 2 minutes.
Serve as white sauce or if desired, stir in grated
cheese for variation,without further microwaving.
This sauce is ideal for vegetables such as broccoli
and cauliflower.
