4 chx breasts, boneless and skinless poach and dice
1/2 c. mayo
1 T curry powder
2 T mango chutney or apricot pres.
1/2 yellow onion, diced
1 stalk celery, diced
1/4 c. currants or raisins
1 T vinegar, cider or whatever
1/2 lemon, juiced
salt and pepper
1/4 c. cashews
Instructions
Combine mayo, curry, vinegar, chutney, lemon juice, salt and pepper.
Stir well. Throw in rest and mix til coated. Chill overbite. Garnish
with cashews. Serve on bed of watercress.
