     Tomatoe Tart

Ingredients
Refrigerated pie crust
1 3/4 pound Tomatoes 1/2 in.thick
Salt
5oz. Softened goat cheese
5oz. Softened mascarpone
1/4 C Parmesan
2 t. Minced fresh thyme or dried thyme
Pepper
Olive oil(optional)
 
Fresh or dried basil

Instructions
Pre heat oven to 425.Unroll pie crust and fit into removable bottom pan. Prick bottom and cover with foil with dried beans on top.
Place sliced tomatoes on paper towels and sprinkle with salt let stand 30 min. Turn halfway through. Pat dry remove large seeds.
Combine goat cheese, mascarpone, Parmesan, thyme. Salt and pepper to taste. Spread on cooled crust. Arrange tomatoes on filling, overlapping sprinkle with salt and pepper. Bake for 20 minutes at 425 shielding edges. Remove from pan and let cool.dizzle with olive oil and fresh basil leaves.
Can also use dried basil with cheeses and eliminate olive oil.
