Boil until beans are soft (4 hours or so) adding water all the time. Bring to boil, then lower temp to simmer. Watch carefully to prevent boiling dry.

Remove the hamhocks and discard bones and fat. Return meat to the beans.

|
Serve as is with cornbread or crax. Or serve with fresh salsa or green tomato relish.

|
Guatemalan beans - fry thinly sliced hot dogs and bacon. When crisp add fresh salsa and cook till soft. Pour over top of beans.
