1 EGG YOLK PLUS TWO YOLKS FROM CRUST
1 CUP SUGAR
 
3/4 CUP FRESH LEMON JUICE STRAINED
2 TBS LEMON ZEST
PINCH SALT
6 TBS BUTTER

Instructions
CRUST PLACE THE COCONUT & SUGAR IN PROCESSER PROCESS TILL MINCED ADD EGG WHITE PRESS INTO TART SHELL BAKE 325 REMOVE 1/2 WAY THROUGH COOKING AND PRESS DOWN CRUST WITH SPOON REMOVE FROM TART PAN
FILLING WISK ALL INGREDIENTS COOK ABOUT 10 MINUTES TILL THICKING OCCURES STIR CONSISTANTLY STRAIN THROUGH FINE CHINA CAP INTO PIE CRUST BAKE 10 MINUTES LONGER THEN COOL
SERVE WITH WHIPPED CREAM ON TOP
