OVEN 350
GREAST A 9 NCH SPRINGFORM PAN WITH 1 TABLESPOON OF THE BUTTER
DUST WITH COCOA POWDER

IN A BOWL OVER SIMMER WATER
MELT THE CHOCOLATE AND THE 8 TBS BUTTER
TILL SMOOTH AND CREAMY
REMOVE FROM HEAT
|

|
beat the egg yolks together with the sugar and vanilla till thick
whip the whites and salt till stiff hold
scrape the sides of the bowl once or twice
beat about 3 minutes
slowly fold in the chocolate into the yolk mixture
then fold in egg whites that have been beaten

Pour THE BATTER INTO THE SPRINGFORM PAN
BAKE CENTER OF THE OVEN ABOUT 40 MINUTES UNTIL SPONGY
REMOVE FROM THE OVEN AND REMOVE THE SPRINGFORM RING AND ALLOW TO COOK ON A CAKE RACK COMPLETELY
TOP WITH THE CHOCOLATE GANACHE WHEN COOL
