     Carrot Cake- Best Ever!

Ingredients
Flour 2 cups
Sugar 2 cups
Oil 1 1/2 cups
Eggs 4 large
Baking Soda 2 tsp.
Cinnamon 2 tsp.
Salt 1 tsp.
Carrots 2 cups shredded
Pineapple, drain, can, crushed, 8 oz
 
Walnuts 1 cup, chopped

Instructions
Preheat oven to 350 degrees. Grease and flour 9-10 inch or 13 X 9 inch pan, or 2 8 inch layer pans.
In large bowl at medium speed, beat sugar, oil & eggs until smooth ~ 2 minutes. At low speed, add flour, soda, cinnamon & salt, beat just until smooth. Stir in carrots, pineapple & nuts, mix just until blended.
Pour into prepared pan. Baked 45-60+ minutes, until lightly browned and set in center (or toothpick comes out clean from center)
Frost with cream cheese frosting, decorate with coconut.
Serving Suggestions
Cold, with ice cream
