Preheat oven to 350 degrees. Grease and flour 9-10 inch or 13 X 9 inch pan, or 2 8 inch layer pans.
In large bowl at medium speed, beat sugar, oil & eggs until smooth ~ 2 minutes. At low speed, add flour, soda, cinnamon & salt, beat just until smooth. Stir in carrots, pineapple & nuts, mix just until blended.
Pour into prepared pan. Baked 45-60+ minutes, until lightly browned and set in center (or toothpick comes out clean from center)
Frost with cream cheese frosting, decorate with coconut.
