     Soft and chewy M&M cookies

Ingredients
1 1/2 C flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 C butter, softened slightly
1/2 C sugar
1/3 C brown sugar, lightly packed
1 large egg
2 tsp vanilla
 
1 1/2 C M&Ms divided (can swap some for choc chips)

Instructions
Preheat oven to 180C. Whisk dry ingredients together and set aside. In a separate bowl, beat butter and both sugars for several minutes, until light and fluffy. Add egg and vanilla, mixing until combined. On low speed add in flour mixture and mix until just combined.
Stir in M&Ms - about 3/4C into the batter, the rest press on top of the cookies before baking. Scoop heaped tablespoons of dough and roll into a ball leaving an inch for spreading on baking tray. Press M&Ms on top keeping in mind cookies will spread so can be generous.
Bake for 8-10 minutes until the centre of the cookies are barely just set. The cookies should look soft and slightly under cooked. They will finish cooking while cooling on the tray.
Remove from the oven and let cookies cool on tray for 10 minutes. Then transfer to wire rack to cool completely. If making smaller cookies, reduce cooking time.
