     Chicken Fried Steak with Country Gravy

2 Tablespoons of Olive Oil
1 Tablespoon of Butter
1 Cup of Flour
1 teaspoon of Onion Powder
1/2 teaspoon of Smoked Paprika
1/2 teaspoon of Cayenne Pepper
Kosher Salt and Fresh Pepper
1 Large Egg
1/4 Cup of Water
2 Pounds of Cube Steaks
3 Tablespoons of Butter
4 Tablespoons of Flour
1 1/2 Cups of low sodium of Chicken or Beef Broth
1 Cup of Milk
Salt and Pepper to Taste

Heat Olive Oil and Butter in a large non-stick skillet over Medium Heat until ripples begin to form. While the oil is heating whisk 1 cup of Flour, Onion Powder, Paprika, Cayenne, Salt and Pepper together in a Medium bowl, Set aside In a separate bowl, Whisk together Egg and water.
Season the steaks with Salt and Pepper. Dredge one steak in the flour mixture then the egg and back in the flour mixture again to coat.
Add coated steak to the skillet. Repeat with the remaining steaks adding more oil if needed. Work in batches if necessary as to not overcrowd the pan. (over crowding will cause the steaks to steam and not get crisp) Cook the steak 3-4 minutes or until crisp and Golden Brown. Flip the steaks and continue to cook for an additional 4 minutes. transfer to a baking sheet and cover with foil to keep warm.
Gravy add butter to the skillet and sprinkle with flour. Whisk together in the pan until thickened. Season with Salt and Pepper to taste. Serve the steaks immediately with the Gravy.
