     Pico de Gallo

6 large plum tomatoes
1/2 medium white onion, finely chopped
1/2 bunch of cilantro (can omit or add more)
2 jalepenos, seeded and finely diced (adjust to taste)
2 cloves garlic, minced
2-4 tbsps freshly squeezed lime juice
1/2 tsp kosher salt

The secret to this is to dice everything as finely as possible, it takes forever but it is worth it. You can also add in some premade salsa for additional flavor
Core, quarter and remove the seeds from the tomato. Place the tomatoe on paper towel to drain. Add the onion, cilantro, jalepenos and garlic to a large bowl. Finely dice the tomatoes and add to the bowl and toss. Add salt and lime juice to taste and toss again. Allow the flavors to develop at room temperature for at least 30 minutes before serving.
