     Vietnamese Red Rice

2c white rice, cooked
2Tb oil
1 cloves of garlic, minced
1Tb tomato paste
1/4ts kosher salt
3/4ts Maggi
1Tb butter

Cook white rice. Let rice sit overnight uncovered in the refrigerator.
Heat large nonstick skillet over medium high heat, and add oil. Once oil is hot, add garlic, cooking until fragrant. Then add rice and stir to combine. Add tomato paste to combine. Sprinkle in salt, Maggi and pat of butter.
