     Paleo Sweet Potato Casserole

Ingredients
3 c. mashed sweet potatoes, fresh or canned
1/4 c. butter, divided
1/2 c. maple syrup
1/2 c. coconut milk
1 dash salt
1 tsp. vanilla extract
Topping-
1/2 c. almond flour
 
1 Tbl. coconut flour
1/2 c. Coconut sugar
1 c. chopped pecans or walnuts (optional)

Instructions
Combine sweet potatoes, eggs, maple syrup, coconut milk, salt, 1/4 c. butter, and vanilla. Spread into a greased 9 x 13.
In a separate bowl combine coconut sugar, almond flour, coconut flour, and 1/4 c. butter (softened) to make a crumb topping. Sprinkle topping on top. Sprinkle chopped nuts on top.
Bake at 350 for 45 minutes.
If prepared ahead of time; chill until ready to bake, then bake at 350 for one hour.
