     Thanksgiving Turkey

Ingredients
1 turkey or turkey breast
EVOO (Extra Virgin Olive Oil)
Herb de Provence with Lavendar
Cracked Pepper
1sliced in half apple
1 sliced in half lemon
1 sliced in half orange
For Gravy-
 
Flour
Cracked pepper

Instructions
Pre-heat oven to 350 degrees F. Get your roasting pan with rack ready. Slice the apple, lemon and orange in half. Place the turkey or turkey breast on the rack. Place the fruit in the cavity of the turkey (or the underneath of the turkey breast). Rub a good amount of EVOO over the skin with either gloved hands or a paper towel. Sprinkle the Herb de Provence with Lavender and cracked pepper over the turkey skin. Cover loosely with aluminum foil. Cook according to poundage cooking times. Take foil off at end to brown.
For Gravy- Pour drippings into a measure cup made for separating the fat from the drippings. Pour the separated drippings into a saucepan and bring to a boil. While you are waiting, take a couple of tablespoons (T.)and water until you get a slushy with no lumps. As the drippings come to a boil slowly add the slushy while stirring. Add more slushy until you get the gravy consistency that you want. Turn the heat down from medium to low. Add cracked pepper and other preferred seasonings and serve hot.
