     Mexican Chocolate Icebox Cookies

Ingredients
1 1/2 cups sifted flour
3/4 cup unsweetened coca powder
1/2 tsp salt
generous pinch black pepper
generous pinch cayenne
3/4 tsp cinnamon
6 oz sweet butter
1 cup granulated sugar
1 large egg
 
1 1/2 tsp vanilla

Instructions
Sift together flour, coca, salt, pepper, cayenne and cinnamon. Set aside. Cream butter, add sugar and vanilla. Beat in egg, gradually add the dry ingredients until all are mixed.
Turn the dough onto a lightly floured board. Shape the dough into a cylinder about 10 inches long and 2 inches in diameter. Wrap cylinder in wax paper and place in freezer until firm.
Unwrap dough, place on board. Cut with sharp heavy knife, 1/4 inch slices. Use stamp if desired. Place on cookie sheet. Bake 10-11 minutes, revering sheets top to bottom and front to bake once during baking.
The cookies are done when they are almost firm to touch. Cool for a few minutes before moving with wide metal spatula to metal rack.
