     NANCY'S BLUEBERRY MUFFINS

Ingredients
3 cups Quaker Oats
1/2 cup almonds
1 Tbs baking powder
1 egg
1 cup mandarin oranges, drained
1 cup applesauce
1/4 cup Splenda brown sugar
1/2 Tbs vanilla
1 banana
 
1 Tbs cinnamon
1 Tbs vanilla
1 or 2 cups blueberries

Instructions
Preheat oven to 375 degrees.
Blend oats and almonds in food processor until it is the consistency of flour. Put in other dry ingredients and mix. Remove from processor. Put in processor, mandarin oranges and other wet ingredients other than blueberries. Blend. Add the dry ingredients and mix. Fold in blueberries to batter and pour into paper cups in muffin tins.
Makes 24 muffins. Fill to 3/4 full. Bake 20 minutes. Cool and refrigerate to save.

Makes 24 muffins.
