     CHOCOLATE CUPCAKES

Ingredients
1-1/2 cups rice flour
3/4 cup Splenda; 6 oz measuring cup better to use 3 oz of Splenda baking sugar
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
2-1/2 Tbs pumpkin puree
3 Tbs applesauce
1 egg
1 tsp vanilla
 
1 cup Rice Dream (milk)
3/4 cup chopped pecans (optional)
12 pecan halves to decorate top of muffin

Instructions
Preheat oven to 350 degrees. Line a 12-cup muffin pan with cupcake liners Set aside.
In medium bowl, whisk together flour, sugar, cocoa powder, baking soda and salt.
In another bowl, mix together the wet ingredients and nuts. Combine with the dry ingredients and mix thoroughly.
Fill batter into muffin tin, filling each cup 3/4 full. Bake for 25 minutes. A toothpick inserted into a muffin should come out clean.
Serving Suggestions
Remove cupcakes from tin and cool on wire rack.
