     Carrot Pudding (Figgy Pudding)

Ingredients
1 c flour
4 t baking powder
1/2 t baking soda
1 t salt
2 t cinnamon
1-2 t nutmeg
1 t cloves
2 t allspice
2 t vanilla
 
2 c sugar
1 c butter
4 eggs
2 c carrots, grated
2 c apples and/or potatoes, grated
2 c raisins- can leave out
2 c nuts-pecans
4 c soft bread crumbs

Instructions
Stir together flour, baking powder, soda, salt, cinnamon, nutmeg, allspice and cloves; set aside Spray inside jar with canola oil Beat together butter, vanilla and sugar; add eggs and beat until creamy. Stir in carrots, apples and/or potatoes and raisins, mix well. Stir in bread crumbs; Stir in flour mixture. Mix together. Spoon into big mouth quart jars (fill approximately 3/4 full) Put on lid and ring.
Brint water in canner kettle to a boil, reduce heatto simmer (water should remain gently boiling or simmering throughout the steaming process - adjust heat accordingly; place filled jars in canning kettle, cover kettle and steam pudding 2 hrs.
Makes approx 4 jars pudding. Can eat cold or warm. Serve with spicey sauce and cream.
