     Banana Bread

This recipe makes LOTS of bread
1/4 cup white sugar
1 tsp ground cinnamon
3/4 cup butter softened
3 cups white sugar
3 eggs
6 very ripe bananas
16 oz sour cream
2 tsp vanilla
2 tsp cinnamon
1/2 tsp salt
1 tsp ginger, optional
3 tsp baking soda
4 1/2 cups King Arthur Measure for Measure GF flour, this brand is AMAZING and sold on Amazon
1 cup chopped walnuts or pecans, optional

Preheat oven to 400. Grease 4 7x3 loaf pans, or several cupcake tins adding paper liners. In a small bowl combine 1 tsp cinnamon with 1/4 cup sugar. Dust pans with this mixture.
In a large bowl, cream butter with sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon/ginger. Mix in salt, baking soda and flour and stir in optional nuts
Divide into prepared pans, taking time to smooth over the mixture.
For muffins bake 30 to 40 minutes, for loaves one hour plus 5 minutes, until a wooden toothpick comes clean. Freezes great.
