     Corn Bread (Vegan)

Ingredients
2 T ground flaxseed
6 T water
1 cup gf flour
1 cup conrmeal
1/4 cup sugar (i used honey)
4 tsp baking powder
3/4 tsp sea salt
1 cup soymilk (i used ricemilk)
1/4 cup oil (i used olive oil)
 

Instructions
Preheat oven to 425F. Spray 8 inch baking dish with non stick spray. Bring water to a boil in a small saucepan and add flax seed. Simmer for three minutes or until thickened, stirring occasionally. Set aside
In a medium bowl combine the flour, cornmeal,baking powder and salt. Add the flax seed mixture, milk, oil and honey. Beat just until smooth. Do not overbeat. Pour into prepared baking pan and bake for 20-25 min.
1/7/19 I baked for 15 minutes. I used a gf flour from grocery outlet that I'm not that fond of but this turned out good and everyone liked it. Not too corn tasting and it wasn't gritty. I liked the consistency. It was more cake like in texture and flavor, but not too sweet. Next time, I will try a different flour blend to see how it tastes.
