     Sweet Italian Sausage (2)

Ingredients
3 lbs ground pork (I use pork loin). 1/3=500gms
3 tbsp red wine vinegar. 1/3=1 TBS
1 tbsp salt. 1/3=1 tsp
1 tbsp cracked black pepper. 1/3=1 tsp
1 1/4 tbsp dried parsley. 1/3=1/2 tsp
1 tbsp garlic powder. 1/3=1 tsp
1 tbsp onion powder. 1/3=1 tsp
1 tbsp dried basil. 1/3=1 tsp
2 tsp paprika. 1/3=1 rounded tsp
 
2 tsp crushed red pepper flakes. 1/3=1 rounded tsp
3/4 tsp ground fennel. 1/3=1/4 tsp
1/4 tsp brown sugar (I used a dose of maple syrup) 1/3=sprinkle
1/8 tsp dried oregano. 1/3=couple shakes
1/8 tsp dried thyme. 1/3=couple shakes

Instructions
Mix all dry ingredients together. In a separate bowl add red wine vinegar and brown sugar/maple syrup to ground pork and blend. Add mixed dry ingredients. Get your hands in there to be sure the mixture is homogeneous. Take a small portion and fry/taste. Adjust your hot spices (particularly the red pepper flakes) upward if you want more punch.
