Deseed and thinly slice bell peppers and onions.
Zest 1tsp from lime. Quarter lime.
Combine sour cream, lime zest, squeeze of lime
juice, 1tsp fajitas seasoning and 2tsp water in a
small bowl. Season with salt and pepper. Set
aside.

Drizzle oil in large pan over medium high heat. Add
bell pepper to soften. Then add red onions. Season
with salt and pepper and transfer to plate.

In same large pan, drizzle oil and heat over medium
high heat. Add chicken in single layer. Season
with fajita seasoning and some salt and pepper.
Stir until brown and fully cooked. Set aside.

Using same large pan, warm up tortillas. Soak in
pan juices. Top tortillas with bell pepper
mixture, then chicken, then top with sour cream and
guacamole. Serve with lime wedges.
