Clean pork tenderloin and rub with jerk seasoning over night
Roast off corn in oven or on grill that has been seasoned with salt, pepper, cumin, olive oil
Drain black bean
Chop and all green onion, red pepper, jalapeno, little rice vinegar, cilantro mix with the corn and black bean
Sear and roast the pork tenderloin until 145 to 150 degree, remove and rest
Pan fry sliced plantains
