1/2 CUP GREEN PEPPER DICED
1 TBS MINCED GARLIC
1/2 CUP DICED TOMATO
1/4 CUP TOMATO PASTE
1/2 CUP DRY RED WINE
1/4 CUP DRY SHERRY
 
2 TBS CAPERS DRAINED
3 TBS MINCED GREEN OLIVES
TT SALT AND PEPPER

Instructions
IN HOT PAN COOK GROUND LOBSTER REMOVE SAUTE ONION PEPPERS GARLIC AND TOMATO FOR ABOUT 5 MINUTES MIX THE TOMATO PASTE RED WINE AND DRY SHERRY ADD BACK THE LOBSTER TO VEGETABLES AND THE TOMATO PASTE MIXTURE STIR IN CAPERS AND OLIVES COOK ABOUT 5 MINUTES MORE CHECK SEASONINGS AND COOL
TO ASSEMBLE ROLL OUT THE EMPANADA DOUGH AND CUT OUT CIRCLES PLACE 1 TBS LOBSTER MIXTURE ON THE DOUGH CIRCLES FOLD OVER INTO HALF MOON AND CRIMP WITH A FORK FRY 300 DEGREES FOR 3 TO 4 MINUTES
