     Eggs Frattata in Cast Iron (12 inch Pan)

Ingredients
spinach
celery
mushrooms
red, orange & yellow peppers
onions any kind diced
tomatoes (we cut the seeds out)
sausage or bacon or any meat
potatoes (chunks) or pasta or any starch
12 eggs
 
1/4 c. heavy cream
1/2 cup cheese
1/4 c. sour cream
Salt and Pepper

Instructions
Mix egg and creams together. Great dish to clean out your frig. Anything you would like in an omelet throw it in! Particularly good after homemade pizza night.
It is important to put the starch at the bottom. I used olive oil to saute each of the items and set aside in a bowl. Saute the potatoes last and add everything back in the pan.
Add the cheese to the eggs and stir. Pour the egg mixture in the pan. Do not stir, just poke things down into all the sauteed goodies.
Bake uncovered at 350 for 15 minutes or until the eggs don't jiggle in the middle. (If the cast iron pan and sides are seasoned well it shouldn't stick. Use a silicon brush and coat the sides while sauteing the vegetabables.)
