     Chicken Parmesan and Rice

1.5 lbs chicken Breasts cut into 1 inch pieces (2 Breasts)
4 Tbsp butter
1 onion diced
3 tsp minced garlic (less if powder)
2 tsp Italian Seasoning
1/2 tsp pepper
1 tsp salt
2 1/2 cups chicken broth
1 cup long grain white rice
1/2 cup heavy cream
1/2 cup grated parmesan cheese (less if powdered, like 1/3 cup)
Parsley for serving (optional)

Heat butter in a large skillet over medium high heat. Add onion and cook for 2-3 min until beginning to soften. Add diced chicken to the pan along with the Italian seasoning pepper and salt. Cook and stir for 5 min until chicken is golden on all sides. Add garlic and cook for 1 min.
Add chicken broth and rice to the pan and stir. Bring to a boil then reduce the heat to medium low. Cover with a lid and simmer for 17-20 min until rice is completely tender.
Stir in the heavy cream and Parmesan. Top with parsley if desired.
