4 tbsp butter, melted and cooled (save some for pan)
2 large egg yolks
1 can (14 ozs) sweetened condensed milk
1/2 cup fresh lemon juice (~3 lemons)
Preheat oven to 350F/180C. Brush square baking
dish with melted butter. Crush graham crackers.
Add in sugar and melted butter, mix. Press
mixture into buttered pan. Bake until lightly
browned, 8-12 minutes. Cool crust 30 minutes
while making filling.
Whisk together egg yolks and condensed milk.
Add lemon juice, whisk till smooth. Pour
filling into crust, spread to edges.
Bake until set, about 15 minutes. Cool on rack.
Refrigerate for at least one hour before
