Preheat oven to 375.
Coat muffin tin with cooking spray.
Combine flour, baking powder, salt, and sugar in
bowl.
Beat egg with milk in small bowl.
Add vanilla, lemon peel, oil, and jam.
Stir milk mixture and strawberries into flour
until just blended.
Spoon into cups.
Bake 15-18 minutes until finished.
