lemon peel from 12 lemons
750 ml of high proof vodka or everclear
1 quart water
32 oz by weight sugar (4 cups)

peel lemons in wide strips leaving white part behind. add vodka or everclear. seal in wide mouth jar. store in a dark cool place for three or more weeks until peels are pale and vodka has taken on color and taste. shake from time to time.
bring sugar and water to boil. strain solids from vodka mixture. combine with sugar syrup. bottle in vodka bottles. if it is too strong make up more syrup in one to one proportion and add good stored in freezer or refrigerator but not necessary. stronger mixture is good mixed in gingerale or other clear soda. milder versions are great as an aperitif. beware, it packs a punch. orange peel may be substituted or lime. do not mix lime and lemon peel. it tastes good but becomes an off color. .
Serving Suggestions
frozen or over ice as an aperitif or mixed with a favorite soda.
