     mac and no nut cheese- carrots/potatoes

Ingredients
1 lb brown rice macaroni pasta
1 medium potato, peeled and diced
1 medium carrot
1/2 medium onion, chopped
1/2 c coconut milk
1/2 c non dairy sour cream
3/4 c water
1 1/2 tsp pink himalayan sea salt
1/4 tsp smoked paprika
 
1/2 c nutritional yeast flakes
1 1/2 tsp lemon juice
2 c vegan shredded cheese (violife brand if not homemade), divided

Instructions
Step 1 Preheat oven to 375F. Step 2 Add the macaroni to a large pan of boiling water and cook as per the instructions (usually 8-10 minutes). Step 3 While the macaroni is cooking boil the potatoes, carrots and onion until they soften. Step 4 Add 1/2 cup of cheese and all of the other ingredients to a blender and blend until smooth. Step 5 Drain the macaroni and return to the pan. Step 6 Mix in 1 cup of vegan shredded cheese with the macaroni. Step 7 Pour the sauce over the macaroni and stir well. Pour into a baking dish. Step 8 Place in oven and bake for 30 minutes covered. Step 9 Remove foil and top with 1/2 c of vegan shredded cheese. Place pan back into the oven and allow to crust for 15 min.
